Succotash

succotash

  • 2 zucchini, sliced into coins and quartered
  • 10 oz. (about 1 1/2 cups) frozen corn, thawed (I used 365 brand from Whole Foods)
  • 10 oz. frozen lima beans, thawed (see above)
  • 2 avocados
  • 1 pint cherry tomatoes
  • lemon
  • seasoning of choice, such as Spike or thyme

In a saute pan, heat olive oil over medium-high. Add zucchini and cook, stirring frequently, until softened slightly, about 5 minutes. Add corn and lima beans and cook until heated through, about 5 minutes. Salt to taste.

Serve with half an avocado and a handful of cherry tomatoes, sliced in half. Squeeze a bit of lemon juice on top and sprinkle with seasoning. Can be served warm or at room temperature.

Makes 3-4 servings.
