Buckwheat Porridge

  • 2 cups raw buckwheat groats
  • 1 1/4 cup unsweetened almond milk
  • 2 tbsp. chia seeds
  • 1 1/2 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1-inch piece fresh ginger, peeled and diced

Soak buckwheat groats in water overnight. In the morning, rinse and strain 1 cup and set aside. Rinse and strain remaining groats and blend with other ingredients until smooth. Pour into large bowl and stir in the reserved cup of groats. Serve with maple syrup or honey, almonds, chopped dates, diced apple, and banana slices.
