Chocolate Chip Walnut Cookies

  • 3 1/2 cups rolled oats
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. cinnamon
  • 2 cups walnuts
  • 3 tbsp. coconut oil
  • 1 cup brown sugar
  • 2 tsp. vanilla extract
  • 1 1/2 cups vegan chocolate chips

Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.

In food processor, process 1 1/2 cups oats for a minute until they have flour-like consistency. Transfer to medium bowl and whisk in baking soda, salt, and cinnamon. Set aside.

In food processor, pulse walnuts until they are ground into a fine meal. Add coconut oil and blend until mixture has consistency of nut butter. Transfer to a large bowl.

Bring brown sugar and 1/2 cup water to a boil in a saucepan. Pour over walnut mixture, add vanilla, and stir. Stir in oat flour mixture. Cool 10 minutes, then stir in remaining 2 cups oats and chocolate chips.

Shape cookies into 2-inch balls and place on baking sheet. Flatten cookies with bottom of drinking glass dipped in water. Bake 8-10 minutes until cookies begin to brown and top looks dry.
