Apple Crisp

Fruit layer

  • 5 green apples, cored and diced (approx. 6 cups). Summer version: 3 apples and 2-3 cups blackberries. Fall/Winter version: 3 apples and 1 pint fresh cranberries.
  • 1/2 cup 100% apple juice, such as Simply Apple brand
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cardamom
  • 1 tbsp. lemon juice
  • 1 tbsp. arrowroot powder
  • 3/4 cup brown sugar (optional)

Topping

  • 2 cups rolled oats
  • 1/2 cup white whole wheat flour, or spelt flour
  • 1/2 cup apple juice
  • 3 tbsp. coconut oil
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cardamom
  • 1/4 tsp. salt
  • 1/2 cup walnuts, crumbled
  • 1/4 cup brown sugar (optional)

Preheat oven to 425 degrees F.

Mix fruit layer ingredients together in large bowl. Spread evenly in baking dish and bake for 10 minutes.

While the fruit layer is baking, combine topping ingredients in bowl and mix well. Sprinkle on top of fruit layer and bake an additional 15 minutes, until topping is golden brown. Serve hot.
