Vegan Pimento Cheese

Vegan Pimento Cheese

  • 1/3 cup cashews, soaked at least 2 hours or overnight
  • 1 1/2 cups chickpeas, or 1 15 oz. can chickpeas
  • 2 tbsp. unsweetened almond milk
  • 1 4 oz. jar pimentos, drained
  • 3 tbsp. nutritional yeast
  • 2 tbsp. lemon juice (about 1 lemon)
  • 2 cloves garlic
  • 1 tsp. Dijon mustard
  • 1/2 tsp. onion powder
  • 1/2 tsp. smoked paprika

In a food processor, blend half the cashews and half the chickpeas with the remaining ingredients. Add the rest of the cashews and chickpeas and pulse several times for chunky consistency. Add salt to taste.
