Mock Tuna Salad

  • 1 cup raw almonds, soaked overnight
  • 3 celery stalks, chopped
  • 2 green onions, chopped
  • 1 garlic clove, minced
  • 3 tbsp. Vegenaise
  • 1 tsp. Dijon mustard
  • 1 tbsp. lemon juice
  • 1-2 cucumbers, sliced

Place almonds in food processor and process until finely chopped. They should have a flakey texture. Add to mixing bowl with remaining ingredients and stir to combine. Add salt and pepper to taste. Serve with cucumber slices.
